MY REVIEW: "The Gestational Diabetes Cookbook & Meal Plan: A Balanced Eating Guide for You and Your Baby" offers insight into a healthcare issue which cannot be overlooked: gestational diabetes--a disorder of blood sugar regulation which occurs for some women during pregnancy. Authors Joanna Foley, a registered dietician, and Traci Houston, a chef, have combined their knowledge and life experiences to create a meal plan and food guide--with recipes--designed to help those with this condition manage their blood sugar levels and have a healthier pregnancy. As the authors advise, "Consult your health care team about what is right for you". Included in the book: "Eating Guidelines for Gestational Diabetes" and "The 4-Week Meal Plan". These sections are filled with such helpful information as meal-prep hints, snack options, and shopping guides. Here are some of the recipes you'll find: "Berry Almond Smoothie"; "Blueberry-Coconut Breakfast Cookies"; "Breakfast Tacos"; "Maple Sausage Frittata"; "Slow Cooker Chicken and Vegetable Soup"; "Cheeseburger Soup"; "Summer Salad"; "Southwest Salad"; "Veggie Fajitas"; "Italian Zucchini Boats"; "One-Pan Chicken Dinner"; "Rosemary Chicken with Potatoes and Green Beans"; "Sloppy Joes"; "Beef Burrito Bowls"; "Shrimp Stir-Fry"; "Lemon Pepper Salmon"; "Creamy Dill Dressing"; and "Roasted Red Pepper Spread".

TRACI HOUSTON

Traci Houston

TRACI HOUSTON, a former Air Force veteran turned chef, was diagnosed with gestational diabetes mellitus (GDM) during her first pregnancy. Traci's blog, thegestationaldiabetic.com, is a recipe and resource center that addresses common questions and pain points for GDM mothers.

Traci Houston was born in Marrero, Louisiana in 1986 but grew up mostly in Colorado Springs, Colorado. At 18 years old she joined the U.S. Air Force where she served honorably for nine and a half years. In that time she earned an Associates degree in Logistics & Business Management and Bachelor's degree in Health Administration. Those military years shaped her as an adult but didn't provide the freedom to feed her ambition. Consequently, Traci willingly separated from the Air Force to pursue a passion in culinary. Within months of leaving the military Traci started culinary school and graduated just five days before the due date of her pregnancy. It was in that pregnancy that she got diagnosed with gestational diabetes, a condition that led her down a path she never intended to walk. After back to back pregnancies and being a stay at home mom, Traci craved rejoining the workforce, but in a capacity that allowed her to spend as much time as possible with her children. Through much soul searching she embarked upon a blogging journey to help other moms suffering with gestational diabetes, and this is the work Traci continues today.
