MY REVIEW: "The Modern Cast Iron Cookbook: A New Generation of Easy, Fresh, and Healthy Recipes" has quickly become one of my new favorite cookbooks. Author Tiffany La Forge has put together an interesting, informative book of the basics of cast iron cooking and care of cast iron and added dozens of fresh and innovative recipes to make the most of this classic cooking tool. I have long been a fan of cooking with cast iron, and I regularly use my grandmother's skillets as well as other cast iron pans that I have added to my collection along the way. Cast iron, when it is properly cared for (actually very simple), really does get better with use. The author begins by advising all the benefits of cooking with this time-honored tool which make it a great choice for today's kitchens. She then explains the necessity of "seasoning" your cast iron cookware to help build its nonstick properties. Seasoning involves oiling and heating the pan (and keeping it oiled between uses) to give it a slick, shiny nonstick finish. You will also learn how to correctly clean the cookware to protect its slickness. Pan shapes and sizes, along with with favored utensils and cooking techniques are advised in addition to suggested top manufacturers of cast iron cookware.
