MY REVIEW:  If you are thinking of adopting a vegetarian lifestyle--or if you are interested in adding more plant-based meals to your current diet--you will greatly enjoy "Eating Vegetarian: A Healthy Cookbook for Beginners". Authors Alissa and Steve Warham, founders of the plant-based food and drink blog "Meatless Makeovers", have combined their at-home cooking for themselves, family, and friends with years of researching and creating recipes in order to offer this helpful cookbook and meal-planning guide. Part One, "The Vegetarian Way", explains the different types of vegetarian diets, health benefits, nutritional considerations, kids and vegetarianism, kitchen tools, ingredients, and much, much more. Part Two is all about the recipes. Each of the recipes includes a nutritional breakdown, and there is an "A to Z" reference guide to prepping cooking produce. Here are some of the colorful, flavorful dishes that you will find: "Kalamata Olive Hummus"; "Fresh Summer Panzanella"; "Parsnip and Potato Soup with Lemon"; "Portobello and Brie French Dip"; "Italian-Style Greens and Beans"; "Lemon-Asparagus Quiche"; and "Spaghetti Squash Primavera".
