"You Have It Made: Delicious, Healthy, Do-Ahead Meals "--make-ahead recipes from Ellie Krieger--registered dietician-nutritionist, longtime Food Network star, and best-selling author

You Have It Made: Delicious, Healthy, Do-Ahead Meals

Ellie Krieger, New York Times best-selling and multi-award-winning author, has written a cookbook devoted to the kind of recipes that her fans have been waiting for—make-ahead meals. For those who are always short on time when it comes to cooking, Ellie is here to help. Her recipes—which include breakfast bakes, soups, salads, casseroles, and more—can all be prepared ahead of time, making putting food on the table that much easier. Each recipe includes instructions for refrigerating and/or freezing as well as storing and reheating directions. With exciting dishes like the Pumpkin Spice Overnight Oats in Jars and the Herbed Salmon Salad, you’ll be able to have meals ready days in advance. As with her other books, all of Ellie’s recipes are healthy and come complete with nutrition information. But that doesn’t mean they sound like diet food! Just look at the Creamy Tomato Soup, Chicken Enchilada Pie, and Smoky Smothered Pork Chops, to name a few. You Have It Made helps you turn your fridge and freezer into a treasure chest of satisfying, good-for-you meals.

MY REVIEW: Celebrity chef, registered dietician, and TV host Ellie Krieger makes great food--healthy, delicious, real food--and teaches us all how to follow her user-friendly guidelines and recipes. With "You Have It Made: Delicious, Healthy, Do-Ahead Meals", she offers 150 wonderful recipes and shows us how to prep, make ahead, store, thaw, heat, and cook foods that make the most of our meal preparation time. These make-ahead recipes hit what Ellie calls "the sweet spot"--where delicious and healthy meet. She also advises that she gives you complete directions to "successfully refrigerate and/or freeze it, as well as serve it when you are ready". What types of dishes are included? The author has her own Golden Rule: No foods are "Off Limits". However, she does categorize foods into three distinct groups: "Usually", "Sometimes", and "Rarely". "Usually" is for the healthiest foods which are used most often. "Sometimes" foods are used occasionally to add flavor and variety. "Rarely" foods are used infrequently in small amounts but still make an impact. The roster of recipes her is quite varied, offers nutritional breakdowns, and includes such treats as these: "Family Favorite Granola"; "Apple-Cinnamon Baked Oatmeal"; "English Muffin Breakfast Pizzas"; "Honey-Nut Energy Bars"; "Four Bean Salad"; "Spring Pea Salad"; "Southwestern Layered Salad"; "Cranberry Chicken Salad"; "Shrimp and Snow Pea Salad"; "Chicken and Wild Rice Soup"; "Butternut Squash and Apple Soup"; "Tuscan Seven Vegetable Soup"; "Cheeseburger-Stuffed Twice Baked Potatoes"; "Pork Tenderloin with Mustard-Apricot Sauce"; "Chicken-Broccoli Brown Rice Casserole"; "Asian Shrimp Cakes with Avocado-Wasabi Sauce"; "Spinach and Pesto Lasagna Roll-Ups"; "Roasted Autumn Vegetables"; and "Sweet Potato-Vegetable Bake". You truly will "Have It Made" with a kitchen full of fast, flavorful, fabulous meals made by your family's favorite home chef--you!
