MY REVIEW:  When I first opened "Healthy Meal Prep Instant Pot® Cookbook: No-Fuss Recipes for Nutritious, Ready-to-Go Meals" and looked at the recipes, I immediately said "YUM"! Author Carrie Forrest has put together a terrific collection of 75 fabulous recipes, guidelines for healthful eating, Instant Pot usage tips, a meal prep guide, and so much more. One very important tip: always use a minimum of one cup of cooking liquid with each recipe. Follow safety procedures as recommended by the manufacturer.  Pressure cooking became popular with American cooks in the 1950's, and it has evolved through the years into the Instant Pot cooking method that we know and love today. This cookbook is actually authorized by the Instant Pot brand, and it includes many delicious recipes like these: "Cinnamon-Apple Steel-Cut Oats"; "Broccoli and Cheddar Crustless Quiche"; "Spanish Rice"; "Vegetable Minestrone with Pasta"; "Lemon-Garlic Shrimp Scampi"; "Honey Sesame Chicken"; "Pot Roast with Carrots and Potatoes"; "Hawaiian Pineapple Pork"; and "Polish Sausage with Sauerkraut:'.
