MY REVIEW: Maya Feller, author of "The Southern Comfort Food Diabetes Cookbook: Over 100 Recipes for a Healthy Life", is a registered dietician, nutritionist, and the founder of Maya Feller Nutrition. By creating healthy versions of "comfort food", she works to educate the public on how to still enjoy favorite foods while maintaining glycemic stability. Keeping a healthy balance of proteins, fats, and carbs sourced from whole and minimally-processed foods, along with portion control, is a key component for obtaining optimal dietary success. As always, consult with your primary care physician before making major dietary changes. The recipes included here rely on plant-based carbohydrates and combine vegetables, beans, whole grains, fresh fruit, and low-fat dairy foods.
